Christmas Unit Tot School Week 16 and a Break

 I'm so behind on posting our tot school lessons! I plan to share our Christmas unit and also how we celebrated in today's post but I also want share where we're at currently with home learning. We had our Christmas unit for 2 weeks (Dec 13-24)  and it was so fun. The 3 weeks that followed Christmas was a 'break' to regroup and rest. I'm SO glad I put this in our schedule because we certainly needed a break after the holidays. Unfortunately I've gotten a bit off track and haven't been as focused on keeping up with our tot school schedule. It's really easy to let the 'extra' parts of our day fall by the wayside when you're just staying afloat in a season. We were all sick and took turns with a horrible cold, we are serving at church and trying to make spending time in fellowship a priority and we also just got out of our normal schedule groove. Our weekly outing rotation currently looks like: 

Monday- Home/play catch up from weekend/cleaning/budgeting, etc. 

Tuesday- Library Story Time. This is also when we grab books that fit our theme for tot school that week.

Wednesday- Park or grandma/grandpa's house.

Thursday- Bank for cash envelopes/ grocery shopping.

Friday- Play date or Meet daddy at the library near his workplace.

Saturday- Family day.

Sunday- Church/ prize bin/ family movie.

Fitting our tot school lessons into our schedule hasn't been as much of a priority as getting out and establishing a good outing routine and I can also be very disciplined and have tunnel vision in one area while all others seem to get little to no attention. (Any one else struggle with this?) 

I'm going to share Christmas related things today but needed that brain dump before I started! The next post will be summing up the weeks that we barely skimmed over while getting back into our routine while the week we are currently in is Valentine Unit week (My favorite holiday!) 

So without further adieu-- Here is our Christmas unit and also our Christmas 2021 celebrations!

First up is our tot school unit. We read the Story of Christmas from the Bible and my mom happened to gift Leighton a nativity set from Hobby Lobby which she played with all season. 

We own several wonderful children's books for the holidays but also checked out a large amount from the library. 
We crafted a wreath from a paper plate, paint and Christmas themed stickers I grabbed at the Dollar Tree.
We checked out a baking book for kids at the library and Leighton chose a reindeer cake for us to make with my mom while we visited her in Oklahoma for a few days. We had leftover batter and my mom had a tree baking pan so we also made a Christmas tree cake. It was so fun and I think something we will choose to do each year.
We tried a new cookie recipe and boxed them up for neighbor gifts. They were so happy to receive them and Leighton and Josh were able to hand them out in person. 

The rest of the images are from our trip to Oklahoma to visit family. We celebrated with Josh's parents before heading to Oklahoma and Leighton had a blast. While in Oklahoma we visited a light show that both Josh and I grew up visiting and I volunteered at with my family. We stayed at an Air BNB that my mom and her fiancé manage. We had a blast! My dad had cookies and gifts waiting for us and we had a pizza lunch with him and my brother and his girlfriend.

My mom put up decor, had yummy food and presents for all of us. Leighton likes to play in her back yard on her swing set. This year Josh and my brother, Camden, had a corn hole tournament. As you can see, they also had a cute little helper while they played.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Banana Bread Recipe

 When it comes to banana bread I prefer less sweet. I've also realized I'm not a fan of adding chocolate chips to my banana bread--the flavors don't blend well to me! This banana bread is just sweet enough and really yummy with blueberries. A tip I've found helpful is to coat your blueberries in a small amount of flour before folding into the batter. It keeps them from sinking to the bottom.  Here is our favorite banana bread recipe! Ingredients: 3 ripe bananas, mashed. 1 cup sugar 1 tsp salt 1 tsp baking soda 1/4 cup melted butter 1 egg 1 1/2 cups all purpose flour 1 cup blueberries or your choice of add-in. Recipe: Preheat oven to 325* and grease a 9x5 inch loaf pan. Mix bananas, sugar, butter and egg in large bowl. Mix flour and baking soda in separate bowl. Add flour mixture to banana mixture and mix until well combined. Add salt and mix well.  If folding in blueberries, add a small amount of flour to berries and then add to bowl, folding until well distributed. Bak...
