Mushroom Smothered Pork Chops

 I tried a new recipe last night and it did not disappoint. It takes 2.5 hours in the oven at the low temp of 300, but it makes the porkchops so tender that it's worth it! Just remember to start them early in the day so you can enjoy at your usual dinner time.


Ingredients:


6-8 bone-in pork chops

3 cans cream of mushroom gravy

1 cups of water

Sliced mushroom

2 onions, sliced

Seasoned Salt to taste


Recipe:

Season chops with seasoned salt and sear both sides in a hot skillet heated with olive oil til lightly browned. Place in greased glass dishes (you'll need 2 glass dishes so you don't layer the pork chops) and then place sliced onions on top. Mix up Cream of mushroom gravy with a cup of water and spread out on top of porkchops and onion slices. Place sliced mushrooms on top and then cover with foil. Bake at 300 for 2.5 hours and do not remove foil at any point to peak or remove during baking time. 


Serve with rice, mashed potatoes, rolls, veggie...so many options!

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Meatloaf Muffins Recipe

This recipe is served well because of the smaller portions and ease of transfer. No cutting into a big loaf and hoping it cooked all the way through!  This is a very basic meatloaf recipe and I found the original on Every Day Mom's Meals , though I've changed it up quite a bit to fit our family.  See recipe below! Ingredients: 2 lbs ground beef 2 eggs, beaten 1 green bell pepper, diced 1 cup plain bread crumbs salt and pepper to taste 1/4 cup ketchup + extra to top muffins 2 TBSP Worcestershire sauce Recipe: Preheat oven to 350. Spray muffin tin with non stick spray and set aside. In large bowl mix all ingredients well (I use my hands to make sure it's thorough) Fill each muffin tin with some meat mixture, leaving about a half inch from top empty so it doesn't overflow while cooking.  Take your ketchup and squirt a bit on top of each muffin.
