Banana Bread Recipe

 When it comes to banana bread I prefer less sweet. I've also realized I'm not a fan of adding chocolate chips to my banana bread--the flavors don't blend well to me! This banana bread is just sweet enough and really yummy with blueberries. A tip I've found helpful is to coat your blueberries in a small amount of flour before folding into the batter. It keeps them from sinking to the bottom.  Here is our favorite banana bread recipe! Ingredients: 3 ripe bananas, mashed. 1 cup sugar 1 tsp salt 1 tsp baking soda 1/4 cup melted butter 1 egg 1 1/2 cups all purpose flour 1 cup blueberries or your choice of add-in. Recipe: Preheat oven to 325* and grease a 9x5 inch loaf pan. Mix bananas, sugar, butter and egg in large bowl. Mix flour and baking soda in separate bowl. Add flour mixture to banana mixture and mix until well combined. Homemade Pizza Dough Recipe

 Yesterday we spent the day with friends at the splash pad. I didn't remember to set out any meat to thaw and didn't have a plan for dinner, so around 2pm I started brainstorming and realized we had all ingredients for simple pizza--except for the crust! I typically buy flatbread for our pizza from Aldi and you can find that recipe HERE , but alas, I was flatbreadless and needed to come up with another plan. I found this dough recipe by Sugar Spun Run  and knew I had all ingredients to try it. It turned out to be a toddler friendly recipe and Leighton dumped nearly all ingredients in the bowl and helped to knead it as well. You could make a double batch and set up a little pizza bar with multiple toppings for a pizza party--so simple and fun! Simple Chicken Tortilla Soup Recipe

 My husband found this recipe a couple months ago and made it on a gloomy Saturday. It's been in my head to make it again with leftover chicken and this week I decided to do just that! I try and stretch a whole chicken to 3 meals since we can get one chicken from Walmart for under $6. It makes for a very budget friendly week of groceries when we do this. The last time we had a whole chicken my husband also saved the broth and that's the broth I used to make this soup. It was SO flavorful!
