Homemade Pizza Dough Recipe

Yesterday we spent the day with friends at the splash pad. I didn't remember to set out any meat to thaw and didn't have a plan for dinner, so around 2pm I started brainstorming and realized we had all ingredients for simple pizza--except for the crust! I typically buy flatbread for our pizza from Aldi and you can find that recipe HERE, but alas, I was flatbreadless and needed to come up with another plan. I found this dough recipe by Sugar Spun Run and knew I had all ingredients to try it. It turned out to be a toddler friendly recipe and Leighton dumped nearly all ingredients in the bowl and helped to knead it as well. You could make a double batch and set up a little pizza bar with multiple toppings for a pizza party--so simple and fun!

Here is the recipe I used:

2 Cups all purpose flour (With a little more to reach right consistency)

1 Packet Instant yeast (approx 2 1/4 tsp)

1 1/2 tsp sugar

3/4 tsp salt

1/4 tsp garlic powder (I used a bit more) and dried basil leaves.

2 TBSP olive oil + more to coat second bowl

3/4 cup warm water

Recipe:

Combine 1 Cup of the flour, sugar, salt and yeast in bowl. Add garlic and basil if you like those flavors.

Add olive oil and warm water and mix well with wooden spoon.

Gradually add second cup of flour until a cohesive elastic ball is formed. It will be slightly sticky but form in your hands.

Drizzle second bowl with olive oil and wipe up the sides.

Place dough in second bowl and roll around to coat with olive oil.

Cover bowl tightly with plastic wrap and place in warm spot.

Let dough rise for 30 minutes.

Preheat oven to 425* and once dough is ready, roll out onto floured surface (or make 2 balls and roll out like we did.)

Fold edges over to form crust. Brush with a little more olive oil on both pizza and crust. Poke several holes with a fork on the pizza.

Add desired toppings and bake for 15 minutes or until golden brown.

That's it!

I hope you enjoy this recipe.

Jordan

Single Serving Chocolate Chip Cookie Recipe

I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Place butter in fridge to cool s...

Banana Bread Recipe

When it comes to banana bread I prefer less sweet. I've also realized I'm not a fan of adding chocolate chips to my banana bread--the flavors don't blend well to me! This banana bread is just sweet enough and really yummy with blueberries. A tip I've found helpful is to coat your blueberries in a small amount of flour before folding into the batter. It keeps them from sinking to the bottom.  Here is our favorite banana bread recipe! Ingredients: 3 ripe bananas, mashed. 1 cup sugar 1 tsp salt 1 tsp baking soda 1/4 cup melted butter 1 egg 1 1/2 cups all purpose flour 1 cup blueberries or your choice of add-in. Recipe: Preheat oven to 325* and grease a 9x5 inch loaf pan. Mix bananas, sugar, butter and egg in large bowl. Mix flour and baking soda in separate bowl. Add flour mixture to banana mixture and mix until well combined. Add salt and mix well.  If folding in blueberries, add a small amount of flour to berries and then add to bowl, folding until well distributed. Bak...
