Flatbread Pizza Recipe

 Soon after we committed to budgeting and meal planning, I came across a two pack of flatbread at Aldi. The brand is Specially Selected and it is the Stone Oven Baked Artisan Flatbread. When I first started buying them they were $2.99 and now they are $3.49 for the pack of two. My frugal heart isn't partial to the price inflation, but they've become a regular part of our weekly meal plan so I've stuck with them! The sauce is another important part of this recipe. Finding the sauce can be a bit daunting as Aldi (or ours at least) tends to mix the Marinara pasta sauce in with the plain Marinara sauce. I've had to dig and search many times, so don't lose heart :) I'm sharing pictures of each of these as if you're not keeping an eye out on the shelves for them it's easy to pass them by. 



The rest of the ingredients depend on personal taste, but I will share what we choose as toppings. A side note is if you're not partial to red sauce on pizza, pesto is also very delicious and smells amazing when baking. It tastes more like an appetizer when using pesto, but so very delicious. Now, without further adieu--here is our budget friendly and delicious flatbread pizza recipe!


Ingredients:

Two Specially Selected flatbreads (or more if you're entertaining company)

Jar of Marinara Sauce (Make sure it does not say Pasta Sauce) We can get 6 pizzas covered with one jar, though we like light sauce on our pizza. But this jar stretches far for us!

Bag of shredded Mozzarella (We've tried other cheese, but this is our favorite) We do a light covering of cheese as well since we try to limit dairy a few times a week.

Sliced Tomato (I put 3 in a row on each pizza)

Baby Bella Mushroom (As much as you like! I usually use about 4 sliced up.)

Chopped Spinach (a fairly light amount)

Pepperoni (for my toddlers sake. This is her favorite part.)

Banana Peppers (This is a new addition for us. We get the mild peppers, but it gives it great flavor and a jar lasts a long time.)

Italian Seasoning 

Garlic Powder


Recipe:

Place flatbreads on a pizza pan (when I've used baking sheets it doesn't get as crisp as we like. I like to use a pizza pan since it has holes to cook it better)

Cover with as much marinara as you like. 

Sprinkle with cheese.

Add all desired toppings and then sprinkle with Italian seasoning and garlic powder. I don't measure and it's always been delicious!

Bake in oven at 425 degrees for 10 minutes.

That's it! It smells great while baking and my family loves it. Two is plenty for our family of three. 

This recipe helps me to have an easy meal option on Thursdays after we've spent the morning grocery shopping. And another plus--my toddler loves to help prepare it!

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Banana Bread Recipe

 When it comes to banana bread I prefer less sweet. I've also realized I'm not a fan of adding chocolate chips to my banana bread--the flavors don't blend well to me! This banana bread is just sweet enough and really yummy with blueberries. A tip I've found helpful is to coat your blueberries in a small amount of flour before folding into the batter. It keeps them from sinking to the bottom.  Here is our favorite banana bread recipe! Ingredients: 3 ripe bananas, mashed. 1 cup sugar 1 tsp salt 1 tsp baking soda 1/4 cup melted butter 1 egg 1 1/2 cups all purpose flour 1 cup blueberries or your choice of add-in. Recipe: Preheat oven to 325* and grease a 9x5 inch loaf pan. Mix bananas, sugar, butter and egg in large bowl. Mix flour and baking soda in separate bowl. Add flour mixture to banana mixture and mix until well combined.
