2 Years 10 months

 Soon enough we will be celebrating Leighton's third birthday. We were recently talking about her first birthday party and what a great day it was. It was a 'One in a Melon' theme and our closest friends and family came to celebrate. Leighton had a blast and ate her weight in smash cake. 

Her second birthday was an at home celebration with Minnie Mouse decorations and a homemade Minnie cake. It was hard for me to do a birthday party on a smaller scale because I grew up with well thought out themed parties and invited lots of friends. Leighton's best friend Blakely and her mom came by on her birthday and brought gifts and we swam in the pool at our apartment with her daddy and she ate all of her favorite foods. We also turned her car seat front facing that day and she didn't know what to think!

Her third birthday will be July 22nd and although we're not sure of location, we will be having a Curious George themed party. Im sure I'll share more in detail on the party soon, but today I wanted to reflect on who she is as a person right now at 2 years and (nearly) 10 months old.

The monthly posts during the first year really help you to stop and think about the milestones and personality traits that your child is showing, but once the first year is over it's all a blur. You laugh at the cute things they start saying and before you know it, 'muddy cuddles' turns to a well pronounced 'muddy puddles' and that cute phrase is now all grown up and following closely behind is your little one.

Our sweet girl loves people. 'Boys and girls' especially. She talks about her church friends by name and asks about the friends that didn't come to class that day. 

She loves her baby cousin Tyson and being around him has prompted her to begin asking for a baby brudder or sisser. 

She loves to read books and loves any story with a baby in it. Animal or human.

She says 'I can love like Jesus. I love Jesus.'

She loves to help mama and daddy. We try to give her household responsibilities like putting laundry in the washer, putting away the dishwasher spoons, making salad. She loves to mix spinach with shredded cheese and sunflower seeds and serve us. She has a servant heart and we hope to encourage that piece of her personality.

She is creative. I'll set out an activity for her or have an idea of how she will play with toys and she'll create something I hadn't even thought of. She's been playing 'school room' a lot lately with a thrifted Dora backpack that has wheels. She puts toys, play doh and a workbook in it and uses our entertainment center as her 'cubby holes.' She uses her baby bassinet mat as the 'nap area' and gathers blankets and pillows for play nap time.

She enjoys chocolate and barbecue chips. You'll win her over with either. If she's at Grandma Mary's house then she will request pop tarts and juice. 

The sweetest words are 'Wanna play wiff me?' or 'Wanna eat wiff me?' She asks often and we try and say yes each time because we know those moments are fleeting.

She still sleeps each night with Bear Bear, Lady Puppy, Woof Woof and Misabelle.

As I'm working on this post, she's telling me how she plans to get the mountain lion out of the tree in Bass Pro Shop. She saw him a few weeks back and let us know he wants his mama. We found an egg that had fallen out of a nest outside this week and she was certain its mama would come back for it. The kindest heart our girl has.

I could go on and on because I don't want to forget all of these little pieces in time. I also pray to be present and intentional with our time together.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Banana Bread Recipe

 When it comes to banana bread I prefer less sweet. I've also realized I'm not a fan of adding chocolate chips to my banana bread--the flavors don't blend well to me! This banana bread is just sweet enough and really yummy with blueberries. A tip I've found helpful is to coat your blueberries in a small amount of flour before folding into the batter. It keeps them from sinking to the bottom.  Here is our favorite banana bread recipe! Ingredients: 3 ripe bananas, mashed. 1 cup sugar 1 tsp salt 1 tsp baking soda 1/4 cup melted butter 1 egg 1 1/2 cups all purpose flour 1 cup blueberries or your choice of add-in. Recipe: Preheat oven to 325* and grease a 9x5 inch loaf pan. Mix bananas, sugar, butter and egg in large bowl. Mix flour and baking soda in separate bowl. Add flour mixture to banana mixture and mix until well combined. Add salt and mix well.  If folding in blueberries, add a small amount of flour to berries and then add to bowl, folding until well distributed. Bak...
