Chocolate Strawberry Pie

 Think of a chocolate covered strawberry. Now add the flakiness of a crust and the lightness of a cool-whip and cream cheese combo. That's what you get with this deliciously sweet chocolate strawberry pie recipe! It originated from Mennonite culture (if you know me, you know if it has Amish or Mennonite in the title I'm likely to make it). 

I obtained the recipe from the Instagram account of @a_heidimarie and it's the third recipe I've tried and loved from her account. Though she's not a food account, she does share recipes from her parents and grandparents who are Mennonite and they never fail to impress.

So without further adieu--here is the recipe you came for!

This recipe has three parts to it (4 if you're making homemade pie crust but I used frozen store bought because I've learned to choose my battles) And I'll be sharing each part below and then telling how to construct the pie. 

RECIPE TO MAKE TWO PIES

First, if you're using store bought crust make sure to bake it according to instructions and let cool. I think graham cracker crust would be great for this recipe, though I've not personally tried it. I used the deep dish pie crust that comes in a duo pack in the freezer dessert aisle at Walmart. 

Once the pie crust is ready and cooled, add chocolate glaze to crust. See below.

Chocolate glaze Recipe:

1/2 Cup milk chocolate chips. 

1 TBSP butter.

Melt chocolate and butter together in microwave. Stir well and work quickly while warm and more liquid-like. Use a brush or back of spoon to coat the pie crusts with chocolate glaze. Set aside.

Ingredients for Strawberry Glaze/ Strawberry topping:

1-3oz box Strawberry Jello

1 Cup Sugar

2 TBSP Cornstarch

2 Cups Cold Water

1 TBSP Butter

4 Cups Strawberries (I used 3 containers from Aldi and it was plenty. I love the tall/loaded pie look but you could get away with only 3 cups Strawberries if you'd like less. Remember--this is for TWO pies.)

Recipe for Strawberry Glaze/Strawberry topping:

Combine first 4 ingredients on stove top and bring to boil. Boil for 10 minutes, stirring frequently. Remove from heat, add butter and stir and set aside to cool completely. Once cooled, cut up strawberries and mix well with glaze.

Ingredients for 'fluff' of pie:

8 oz cream cheese, softened.

1/2 cup sour cream

2 cups Cool Whip

6 TBSP Sugar

1 tsp Vanilla

Recipe for 'fluff':

Beat Cream Cheese until smooth. Add sour cream, cool whip, sugar and vanilla and beat again until well mixed. Set aside 

Constructing your pies:

On top of chocolate glazed pie crusts, add 'fluff', dividing in half and smoothing out onto the crusts. Next, add strawberry glaze to top of fluff. Place in fridge to chill until ready to serve. When serving, add cool whip to top of strawberry glaze.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. Meatloaf Muffins Recipe

This recipe is served well because of the smaller portions and ease of transfer. No cutting into a big loaf and hoping it cooked all the way through!  This is a very basic meatloaf recipe and I found the original on Every Day Mom's Meals , though I've changed it up quite a bit to fit our family.  See recipe below! Ingredients: 2 lbs ground beef 2 eggs, beaten 1 green bell pepper, diced 1 cup plain bread crumbs salt and pepper to taste 1/4 cup ketchup + extra to top muffins 2 TBSP Worcestershire sauce Recipe: Preheat oven to 350. Spray muffin tin with non stick spray and set aside. In large bowl mix all ingredients well (I use my hands to make sure it's thorough) Fill each muffin tin with some meat mixture, leaving about a half inch from top empty so it doesn't overflow while cooking.  Take your ketchup and squirt a bit on top of each muffin.
