Vegetable Beef Soup Recipe

I'm already craving fall--though I've not yet made anything 'pumpkin'. I did make a very yummy vegetable ground beef soup with corn muffins this past weekend and it is one that I want to remember!

See the recipe below.

Ingredients:

1 lb ground beef, browned and drained.

Small onion, diced.

2 cloves garlic (or a heavy sprinkle of garlic powder)

1 tsp salt

2 potatoes, peeled and cubed.

2 cans beef broth or 1 large container (approx. 28 ounces)

1 can 10oz condensed tomato soup.

1 can diced tomato 15 oz do not drain.

1 can whole kernel corn.

1 can chopped green beans.

2 carrots chopped small.

1 TBSP Worcestershire.

1/2 tsp dried basil.

Recipe:

Brown ground beef with onion and garlic in large pot, drain.

Add all other ingredients to pot.

Bring to a boil then reduce to a simmer.

Simmer for 30 min (lets the flavors come together)

Bake corn muffins. We use Jiffy mix from Aldi.

Enjoy!

You might need to add a bit of salt, but this recipe was a hit. I look forward to making it again as the weather gets chilly!

Single Serving Chocolate Chip Cookie Recipe

I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Place butter in fridge to cool s...

Simple Chicken Tortilla Soup Recipe

My husband found this recipe a couple months ago and made it on a gloomy Saturday. It's been in my head to make it again with leftover chicken and this week I decided to do just that! I try and stretch a whole chicken to 3 meals since we can get one chicken from Walmart for under $6. It makes for a very budget friendly week of groceries when we do this. The last time we had a whole chicken my husband also saved the broth and that's the broth I used to make this soup. It was SO flavorful! The original recipe comes from All Recipes and I will link it HERE , but I did switch it up and exclude a few things.  Enjoy! Ingredients: 1 onion, chopped. 3 cloves garlic, minced. 1 TBSP olive oil. 2 tsp chili powder. 1 (28 oz) can crushed tomato. 1 (10.5 oz) can chicken broth (or homemade). 1 1/4 cups water. 2 cans whole kernel corn, drained. 2 cans black beans, drained and rinsed. 1/4 cup cilantro, plus extra for garnish. 2 cups shredded chicken, cooked.  Corn muffins or tortilla chi...
