Hamburger Potato Casserole Recipe

 A favorite in the Smith household is hamburger potato casserole. I found this super simple recipe by Eating On A Dime when collecting recipes our family might like on Pinterest. We like to keep meals simple and then 'doctor them up' a bit to fit our taste or make them a bit more hearty so we have leftovers. This recipe is super simple, easy and very filling! Oh, and delicious. It does take a lot of time in the oven so I know when it's on the meal plan that I need to start making it at 3pm to have it in the oven by 3:30 to have it ready to go by 5:15 when my husband gets home from work. So if you do make this meal, just know it takes awhile but is well worth it!

Ingredients:

2 lbs ground beef

5 medium potatoes

1 onion, chopped

2 cans cream of mushroom

1 cup milk

1 cup cheddar cheese

salt and pepper

*Optional* 

Baby Bella mushrooms, chopped


Recipe:

Brown hamburger with onion and drain, return to pan.

Mix canned cream of mushroom with milk and add salt and pepper to taste. If you want to bulk this up a bit, add several chopped Bella mushrooms to the soup mixture.

Peel and slice potatoes length wise.

Spray 9x13 glass baking dish and preheat oven to 350*

lay sliced potatoes along bottom of dish, covering it completely.

Add meat and onion to top of potatoes.

Add soup mixture on top of meat and spread evenly. 

Sprinkle half of cheese on top of soup. 

Repeat these steps in order once more and finish with sprinkling last of cheese on top.

Spray foil and place on top of baking dish. 

Bake in oven for 1 hour 10 min.

Remove foil and return to oven for 30 minutes or until cheese is brown and bubbly.

Let sit for 10 minutes before serving.

We like to top ours with ketchup.

That's it! Simple recipe but our family loves it.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Baking Unit | Tot School Week 15

 Baking Unit wasn't as hands on as I had hoped, but we have another week of Christmas festivities to make up for that! We did several worksheets to practice prewriting skills and also decorated a cupcake chef hat! A simple sensory bin was made from oats and some kitchen tools I had on hand. She scooped the oats into the cupcake tins and made 'cupcakes'. The most exciting part of baking week was making gingerbread houses with Grandma. She mostly taste tested but was quite excited about building them! We got started on Christmas books early so didn't check out specific baking books, although a forever favorite of ours is Who At All the Cookie Dough? By Karen Beaumont.
