Taco Soup Recipe

 I stumbled upon a Pioneer Woman recipe several years ago when we were newlyweds and looking for ways to cut our food costs. In her recipe she dumped (literally--juice and all!) 7 cans into a pot til it simmered, added a few other packets of seasonings and some cheese and that was it. A warm and delicious cup of soup was ready to be served! As we tend to do with many recipes we try, we've taken the base of that recipe and tried it with several omissions and additions and came up with what we call 'Taco Soup' which we like to serve alongside corn muffins. This recipe has come in handy a number of times when we have company. The kids enjoy the corn muffins and the soup is easy to serve and also easy to get seconds. The soup stays warm on the stove and makes a very large portion so there will be plenty to share! I've sent it home with a guest before and also left it for a friend when her family was sick.

Ingredients:

Do not drain any juice from cans.

1lb ground beef, browned and drained. (This is optional, but we enjoy having the extra meat added!)

1 can Black Beans 

2 Cans white beans (I use great northern)

1 can light kidney beans

1 can dark kidney beans

1 packet taco seasoning

1 packet ranch seasoning

1 block (8 ounces) cream cheese

1 can rotel (If you or someone you serve does not like spicy foods, omit this from recipe)

1 can creamed corn

1 can fire roasted tomatoes


Recipe:

Brown ground beef in a large pot on stove. Drain once browned and return to pot.

Add cream cheese in chunks to beef until softened and combined well. We've found adding it to the beef limits large chunks of the cream cheese and spreads it out better. 

Add all cans with juice to the pot. 

Add taco and ranch seasonings to pot.

Bring to a simmer/ low boil on stove so flavors can come together.

Serve and enjoy!


We like to serve this soup with Jiffy corn muffins on the side--a box of the mix is .49 cents at Aldi.

Add sour cream and/or shredded cheese to the top. It's also great with sliced avocado.

I hope you enjoy this meal! We rotate it every 3 weeks or so. It's a favorite for our daughter and she often has 3 helpings.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Baking Unit | Tot School Week 15

 Baking Unit wasn't as hands on as I had hoped, but we have another week of Christmas festivities to make up for that! We did several worksheets to practice prewriting skills and also decorated a cupcake chef hat! A simple sensory bin was made from oats and some kitchen tools I had on hand. She scooped the oats into the cupcake tins and made 'cupcakes'. The most exciting part of baking week was making gingerbread houses with Grandma. She mostly taste tested but was quite excited about building them! We got started on Christmas books early so didn't check out specific baking books, although a forever favorite of ours is Who At All the Cookie Dough? By Karen Beaumont.
