I'm sure you've heard of Mississippi Pot Roast before, and I of course did not come up with the recipe myself! I have noticed inconsistencies amongst the available recipes when Google searching it. Some differ in amount of butter you add, some in the pepperoncini amounts and some might add different seasonings to the roast once it's in the slow cooker.
Below you'll find our favorite way to make a Mississippi Pot Roast and also what we do with the delicious leftovers!
Ingredients:
Chuck Pot Roast (We usually grab a 2 lb or little bigger roast from Aldi as they are quite a bit cheaper than Walmart.)
1 stick (8 TBSP) unsalted butter
1 packet Au Jus gravy seasoning
1 packet ranch seasoning
5 or 6 pepperoncini (This depends on how spicy you like your food! If you're not a spice fan, I'd recommend adding 4 or 5. The flavor is incredible so don't skip in fear of spice!)
Add pot roast to slow cooker.
Empty both seasoning packets to top of pot roast.
Add butter in several chunks to top of pot roast
Place your pepperoncinis on top of roast and place lid on pot.
Cook in Crockpot on low for at least 8 hours.
That's it! Your home will smell amazing while this slow cooks all day. We like to have mashed potatoes on the side and dinner rolls with a vegetable like asparagus or broccoli. No need for making gravy for your potatoes because the juice left in the crock pot is phenomenal as gravy!
Now, for what we do with the leftovers...
Of course you could just have the same meal again, but if you're looking for something a little different here's what we like to do.
Grab some hoagies from your grocery store and sliced or shredded Colby jack cheese (or your favorite. Pepper jack is so good, but of course a bit spicy.)
Turn your oven to a low broil. Place hoagies face up (think open face sandwich)
Apply warmed pot roast to the subs and then add sliced cheese on top.
broil til edges of bread are browned and cheese is bubbly. Broilers can be so fickle, so make sure you watch for any signs of burning! About 3-4 minutes.
That's it! You could sauté some peppers and onions as well and add after the broiler step. If you have any juice left it's also good to dip it into the gravy.
