Sugar Cookie Recipe

 I have a habit of finding really great baking recipes and raving over them & then forgetting to save the recipe. I've done this more times than I can count, and when I look for the one I used to remake them later on I'm lost and left to guess which one it was! I've had to try and try again many times in order to find what I once used and this recipe falls into that category.

I first tried this sugar cookie recipe when we invited friends over to have a cookie decorating party. I knew I had things in my cupboard to create sugar cookies, I just wanted one that didn't require chilling time. So I tried this recipe and WOW they were amazing. Add funfetti icing on top & it's practically addicting. 

But alas...I forgot to save it. So I made a couple other recipes and just knew they weren't it. Until I recently found it again and made another batch. One bite & I knew! This was it. 

Recipe credit for these wonderful cookies goes to LifeLoveandSugar She has recipes for frosting to top these cookies off, but like I mentioned--Funfetti icing does the trick if you're looking for something more simple!


Ingredients:

2 3/4 cups all purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 cup unsalted butter, room temperature (If I forget to set out the butter I microwave til softened, but not melted. Just in 10 second increments.)

1 cup + 2 TBSP granulated sugar

2 TBSP light brown sugar

1 egg

2 tsp vanilla

1/4 cup sugar for rolling balls in (we don't do this because it's a bit too sweet with frosting as well)


Recipe:

Preheat oven to 350*

Line Baking sheet with parchment paper

Combine flour, baking soda, baking powder and salt in med sized bowl and set aside.

Cream butter and sugars together in large bowl until light in color and fluffy. 

Add egg and mix until well combined.

Add vanilla and mix until combined.

Add dry ingredients and mix until dough is dough is combined. It will be thick but not sticky. Once it's mixed, use spatula to help it come together to form more of a ball (mine was quite crumbly at first and this helped it to come together.)

Create 1 1/12 TBSP sized balls of dough and roll in extra sugar if you're choosing to. Place on lined cookie sheets and put in oven for 7-8 minutes. I like mine less 'done' so I go for 7 min. Remove just before edges are golden. They'll be puffy at first but will deflate once out. 

Rest on cookie sheet for 4-5 min then place on wire racks to cool completely.

That's it! The most delicious sugar cookie recipe. I'm happy to have added this one to my blog so I don't make the wrong recipe again.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Meatloaf Muffins Recipe

This recipe is served well because of the smaller portions and ease of transfer. No cutting into a big loaf and hoping it cooked all the way through!  This is a very basic meatloaf recipe and I found the original on Every Day Mom's Meals , though I've changed it up quite a bit to fit our family.  See recipe below! Ingredients: 2 lbs ground beef 2 eggs, beaten 1 green bell pepper, diced 1 cup plain bread crumbs salt and pepper to taste 1/4 cup ketchup + extra to top muffins 2 TBSP Worcestershire sauce Recipe: Preheat oven to 350. Spray muffin tin with non stick spray and set aside. In large bowl mix all ingredients well (I use my hands to make sure it's thorough) Fill each muffin tin with some meat mixture, leaving about a half inch from top empty so it doesn't overflow while cooking.  Take your ketchup and squirt a bit on top of each muffin.
