Italian Sausage Sheet Pan Recipe

 Our grocery budget is $110/week and with a growing toddler that may change, but this number works well for us. We have to be intentional about meal planning and shopping what we already have in the freezer and pantry before making the grocery list, but we do well with this number. It took time to develop our budget friendly go to meals and today I'm sharing one with you. Every item is purchased at Aldi and is very cost friendly. We typically have enough left over for one or two lunches, depending if we get seconds the night before. 




Ingredients: Mild Italian Sausage links (will be cut into pieces)

                     Two yellow squash (Aldi sells these in a package of two)

                     2 green bell pepper (any color bell pepper is good, green seems to be cheapest)

                     5 or 6 sweet potato (regular potatoes are good, we like to eat it with ketchup if using regular)

                    Baby Bella Mushroom (I use about 5 or 6 of these)

                    Medium Onion

                    Olive oil to toss vegetables on sheet pan

                    Salt, Pepper, Italian seasoning and Garlic Powder (I eyeball the amounts, though I go pretty heavy handed with these)


     Recipe:

Cut into bite size pieces Squash, Bell Pepper, Onion, Mushroom.

Peel and cut potato into chunks

Spray Sheet Pan and add all vegetables. Toss with olive oil and season with seasonings. 

Cut Italian Sausage into bite size pieces and place on top of vegetables.

Bake at 400 for 45 minutes, tossing every 15 minutes. Let set for about 10 minutes to cool.


That's it! A very budget friendly and healthy meal. If you aren't partial to some of the vegetables used, feel free to mix it up. I've tried several variations and this just seems to work best for our family.

Single Serving Chocolate Chip Cookie Recipe

 I had a few hours to myself today and decided to search for a good single serving chocolate chip cookie recipe. I found one by cookingclassy.com and thankfully it turned out so great! It was similar to the taste and size of Crumbl Cookies chocolate chip cookie (they are my favorite!) The dough is a very crumbly consistency so I recommend once you have your baking sheet lined with parchment paper to just dump it on top and form it into a large disc. I had a hard time trying to get the dough to come together so I opted to do this instead. See the recipe below! Ingredients: 2 TBSP butter (I used unsalted) 3 TBSP packed light-brown sugar. 1 pinch of salt. 1 TBSP whisked egg (crack egg in bowl and mix up well then scoop out 1 TBSP and add to your bowl.) 1/4 tsp vanilla. 1/3 cup all purpose flour. 1/8 tsp baking soda. 3-4 TBSP chocolate chips.  Recipe: Melt butter in microwave until only a little left is unmelted. mix together so that all is melted. Baking Unit | Tot School Week 15

 Baking Unit wasn't as hands on as I had hoped, but we have another week of Christmas festivities to make up for that! We did several worksheets to practice prewriting skills and also decorated a cupcake chef hat! A simple sensory bin was made from oats and some kitchen tools I had on hand. She scooped the oats into the cupcake tins and made 'cupcakes'. The most exciting part of baking week was making gingerbread houses with Grandma. She mostly taste tested but was quite excited about building them! We got started on Christmas books early so didn't check out specific baking books, although a forever favorite of ours is Who At All the Cookie Dough? By Karen Beaumont.
